Black Kale Caesar Salad with Seared Shrimp:
This fresh, delicious salad is quick to prep. Whip together the homemade salad dressing to make it seem like you spent hours in the kitchen. Massage the kale to produce super tender leaves. And then, briefly sear the tender shrimp to give the outside a nice blackened crunch that everyone will love. Lunch or dinner is ready in less than 30 minutes!

Ingredients
- Tuscan Black Kale (or any kale will do)
- 6 - 8 pcs jumbo shrimp
- 1 hass avocado
- 1 tsp garlic powder
- 1 tsp paprika
- 1 tbsp olive oil
- sea salt or himalayan pink sale - to taste
- freshly cracked black pepper - to taste
Caesar Dressing
- 2 egg yolks
- 1 tbsp grainy mustard
- 1 tbsp fresh lemon juice
- 2 - 3 anchovy fillets in oil
- 2 cloves of garlic - minced
- 1 cup freshly grated parmesan cheese
- 1/3 cup neutral oil - (Vegetable Oil, Canola Oil or Grapeseed Oil)
- sea salt or Himalayan pink salt - to taste
- freshly cracked black pepper - to taste
Instructions
- - Wash, devein & season shrimp with salt, pepper, paprika, garlic powder & a drizzle of olive oil. Set aside.
- - Grate parmesan cheese. Set aside.
- - Peel garlic. Add garlic, anchovy fillets and a pinch of salt to a mortar and pestle. Ground ingredients until you have a paste.
- - Add anchovy garlic paste, grainy mustard, lemon juice and 2 egg yolks to a bowl.
- - Mix above ingredients in bowl with a whisk while slowly adding neutral oil.
- - When anchovy/mustard mixture gets to a runny consistency, add 3/4 cups of parmesan cheese & whisk together. Set aside.
- - Heat pan to very hot, oil pan & sear shrimp until a blackened crust has formed. About 3 min on each side. Remove from pan & set aside.
- - Wash, cut & massage kale in a large bowl. Mix in 2 tbsp of Caesar dressing to kale then plate.
- - Cut, core and slice avocado. Place on top of bed of kale.
- - Add shrimp to bed of kale & sprinkle with freshly cracked black pepper and leftover parmesan cheese.

Recipe Tips
- Adding oil too fast in step 5 will separate the mixture. Make sure you take your time and slowly add oil.
- If your Caesar dressing is too thick after parmesan cheese is added, add more oil if you would like your dressing to be a thinner consistency.
